Who doesn’t love a tall stack of fluffy pancakes? These are the perfect treat for weekend brunch, or also great frozen and popped in the toaster for a quick weekday breakfast or snack. I recently whipped up a stack of these ombre matcha pancakes. The secret ingredient? NuttZo 7 Nut and Seed nut butter. If you’re a matcha fan, your tastebuds (and eyes) will swoon; and, if you’re a nut butter fanatic, this recipe is for you. There’s nut butter everywhere here: in the pancakes themselves, and don’t forget the huge spoonful on top!

Adding this to the batter makes the pancakes extra nutty and moist, and you can even see specks of nuts and seeds in them!
For this recipe I used the Power Fuel NuttZo, which has cashews, almonds, brazil nuts, flax seeds, hazelnuts, chia seeds and pumpkin seeds, all organic and roasted to bring out the nutty flavor. I used Matcha Maiden matcha which is organic and sourced from Kyoto, Japan.

Nutty ombre matcha pancakes

Instructions
Mix all ingredients, except the matcha and coconut oil. Add 1 tbsp matcha to the mixture. Mix well until no big lumps are left.
Heat a non-stick pan on medium heat with 1/2 tbsp of coconut oil. Drop 2 tbsp of the batter in the pan and cook each side until golden brown.
To the remaining batter, add another tbsp matcha. You may add more if you want a more drastic change in color. Drop another 2 tbsp of coconut oil in the pan to make another pancake.
Repeat this process until you’ve run out of batter.
Top with more NuttZo and honey (or sweetener of choice) and serve!
