Healthy No Bake Pumpkin Chocolate Chip Cookies

    Ingredients

  • Dry Ingredients:
  • 3/4 cup quick oats
  • 1/2 cup oat flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • Stevia to sweeten
  • A pinch pumpkin pie spice
  • Wet Ingredients:
  • 1/3 cup canned pumpkin
  • 2 to 2 1/2 tablespoon almond milk to consistency
  • 1 tablespoon oil
  • 1/2 teaspoon pure vanilla extract
  • Chocolate chips as desired

  • Step 1

    If you don't have oat flour, simply blend dry oats in a blender until a flour consistency is formed.

    Mix all of the dry ingredients in one bowl, stirring ingredients evenly.

    Mix all wet ingredients in a separate bowl, stirring ingredients evenly.

    Combine wet ingredients into dry ingredients and stir until you have formed a cookie dough consistency. (These are made without eggs so it's okay to lick the bowl).

    Form cookie dough into balls or any shape as desired and garnish with more cinnamon.
