Baking is something that I have become fond of in recent months. I find it quite therapeutic, and the reward of pulling something like a warm dish of brownies from the oven is second to none.
The only problem I’ve found is that once the goodies are done, they can be difficult to resist. l love baked goods as much as anyone, but too many concentrated sugars and grains don’t sit well with my paleo-adjusted digestive system.
Because of this, I do my best to come up with delicious alternatives that don’t bother my gut but still satisfy my sweet tooth. These decadent brownies are one of those creations.
The only added sweetener is pure maple syrup, so you won’t be crashing on a sugar overload. Throw some bacon on top for a salty crunch and healthy fats, and you’ve made yourself the ultimate flourless brownie.
Flourless Bacon Brownies

Instructions
Combine eggs, melted chocolate, butter, and maple syrup.
Sift in cocoa powder and add coffee. Stir to combine.
Pour the batter into an oiled or parchment-lined 9×9 baking dish. Sprinkle on bacon and any other desired toppings.
Bake at 375° for 30 minutes.
Removing the flour gives these brownies a rich, fudgey texture that is impossible to resist. This also makes them gluten-free.
