These popular cookies are a hit at Magic Carpet food truck, where I often see people throwing singles in exchange for the desirable vegan treats. Well, I have good news for you: now you can make them at home! Try this recipe to make a healthy, simple mock-cookie so that you can save your dollar for the day and have your house smelling pretty damn good. We’ve made them two ways (banana chocolate chip and raspberry coconut), but feel free to add your own mix-ins and substitutions.

Prep Time: 5 minutes
Cook Time: 15-20 minutes
Total Time: About 20 minutes

Ingredients:
3 mashed bananas
1½ cup rolled oats
½ cup oat flour
¼ cup unsweetened apple sauce
¼ cup unsweetened almond milk
2 tablespoons Stevia
¼ teaspoon baking soda
1 teaspoon vanilla
Pinch salt

Mix-ins:
½ cup dark chocolate chips
¼ cup raspberries
¼ cup toasted coconut

Directions:

1. Preheat oven to 350°F.
2. Spray a baking sheet with non-stick spray.
3. Mix bananas, oats, oat flour, applesauce, almond milk, Stevia, baking soda, vanilla and salt.13610846074_04a17d0de0_b

4. Divide in half.
5. Add chocolate chips to one half, and the coconut and raspberries to the other.

6. Mix thoroughly.
7. Use a large spoon and drop a small amount of the mixture onto a baking sheet. Do this until the mixture runs out.

8. Place in the oven for 15-20 minutes until golden brown.
9. Remove and serve!
