If you’re anything like me, eating the same ABP salads or Saladelia wraps for lunch every single day can get pretty boring, and I find myself severely lacking in dietary variety.
I figured that the easiest, quickest solution to help me escape this food rut would be making my own easy meals. What better way is there to carry around my dorm-made meals than in some hipster-looking mason jars? Check out these easy, healthy mason jar recipes below, one for every meal.
Breakfast Banana Cocoa Overnight Oats
Prep Time: 5 minutes
Cook Time: Overnight
Total Time: 1 day
Servings: 1
Ingredients:
¼ cup uncooked old fashioned oats
½ cup skim or almond milk
¼ cup low-fat Greek Yogurt
1 tablespoon cocoa powder
1 tablespoon honey (optional)
¼ cup chopped banana
Directions:
1. Combine oats, milk, yogurt, cocoa powder and honey in a mason jar.
2. Close jar and shake well until ingredients are thoroughly mixed
3. Remove lid and add the chopped bananas.
4. Stir until mixed throughout.
5. Close jar and refrigerate overnight, then enjoy!

Healthy Lunchtime Chickpea Salad
Prep Time: 10 minutes
Cook Time: 0 minutes
Total Time: 10 minutes
Servings: 1
Ingredients:
2 tablespoons lemon juice
¼ cup chopped bell peppers
1 cup chickpeas
½ cup chopped tomato
¼ cup chopped onion
½ cup fresh spinach
Directions:
1. Squeeze the lemon juice into the mason jar. Add salt and pepper to taste.
2. Layer the chickpeas and peppers.
3. Add the chopped onion and tomato.
4. Finally, fill the rest of the jar with spinach greens. It may be easier to eat if they are torn or cut into bite-sized pieces.

Easy Cajun Shrimp Dinner
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Servings: 1
Ingredients:
½ cup chopped bell peppers
¼ cup sliced onion
4-8 shrimps
1 tablespoon ground paprika
3 tablespoons guacamole
½ cup fresh spinach
Directions:
1. Chop the peppers and onions.
2. Fry or sautée the peppers and onions in a medium pan for a few minutes, then transfer them into the mason jar.
3. Pan-fry the shrimp with paprika, and mix on the pan for two minutes, or until cooked through (cooking time may vary depending on if the shrimp are pre-cooked or raw).
4. Combine the shrimp with the vegetables in the mason jar.
5. Spoon the guacamole into the jar on top of the shrimp.
6. Add spinach and dig in!
