It's the kind of tune to bop your head to while a warm breeze runs through your hair. Summer is the season for long road trips, which calls for road trip snacks. This tropical, Malibu-inspired trail mix is the perfect snack to munch on during those summer drives.

    Ingredients

  • 1/3 cup popcorn kernels
  • spray bottle coconut oil
  • 1 Tablespoon salt or to your taste
  • zest one lime
  • 2 teaspoons lime juice or about 1/2 a lime
  • 1/2 cup coconut chips toasted
  • 1/2 cup dried mango

    Pop the popcorn using either an air popper or the microwave. To pop in the microwave, place the kernels (no oil needed!) in a popcorn bowl or bag, set the microwave for 3 minutes, and take it out when the popping is more than 3 seconds apart.

    Spray the popcorn with coconut oil so the seasonings will stick. Then, add the salt, lime zest, and lime juice. Toss to coat.
