Make This Rice Pudding When Dining Hall Food Isn’t Cutting It

When it seems like the cold is here to stay and the idea of another delivered pizza is enough to make you nauseous, a home-cooked meal is just what the doctor ordered. This warm and sweet rice pudding is easy to make and guaranteed to remind you of family.

Rice Pudding

  • Prep Time: 30 minutes
  • Cook Time: 1 hour
  • Total Time: 6 hours (needs to chill for at least four hours)

Ingredients
  • 6 cup milk
  • 3/4 cup long-grain rice
  • 3/4 cup sugar
  • 1 cup whipping cream
  • 3 egg yolks, beaten
  • 2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon

Step 1

Rinse a medium saucepan with cold water (do not dry it). Pour in milk and bring to a boil over medium heat.

Step 2

Stir in rice and return to a boil. Reduce the heat and simmer, uncovered, until the rice is tender (about 55 minutes) while stirring occasionally.

Step 3

Combine cream, sugar, egg yolks, vanilla, and salt in a small bowl. Set aside.

Step 4

Stir the cream mixture into the tender rice until completely combined. Heat to a boil.

Step 5

Remove from heat and pour into a 2 quart serving dish.

Step 6

Sprinkle the surface with cinnamon and chill for at least four hours.
