Make This 3-Ingredient Ube Latte to Up Your Instagram Game

I've always been a fan of purple, so this ube craze is just the rest of the world finally catching up. Not only does this root vegetable add a beautiful, royal touch to any dessert, but ube also has a lot of health benefits. 

Sweet potatoes in general are rich in antioxidants. A good rule of thumb is that the more intense the color of the sweet potato, the more antioxidants it has. Ube is also good for regulating blood pressure, maintaining weight loss, boosting your immune system, is diabetic-friendly, and super beneficial for your eyesight, skin health and bones. To top it all off, it's one of the best sources of vitamin A

Purple sweet potatoes in particular have been given the title of super food by countless organizations. A single medium-sized sweet potato provides more than 200% of the daily requirement for vitamin A. At this point, if you're still on the fence on whether or not to try out this Asian sweet potato, stick it in an ube latte.

Ingredients
  • 8 oz purple sweet potato
  • 1/2 cup honey
  • 1/2 cup milk
  • 1 cup hot milk for latte

Step 1

Preheat oven to 400ºF. Then, bake the purple sweet potato for 45 minutes.

Let it cool before peeling and cutting in chunks.

In a blender, add the cooked sweet potato, honey, and cold milk and blend until smooth. Strain through a strainer for a finer texture.

When you are ready to make the latte, add ¼ cup of purple sweet potato paste to a mug along with 1 cup of hot milk. Stir with a spoon, and froth for about 30 seconds to 1 minute. Enjoy!
