Oh my goodness, these cookies may be one of my new favorite recipes. Light, fluffy, and delicious, these cookies are the vegan dream you’ve been waiting for. Perfect for chilly winter evenings, these hot chocolate chip cookies are easy to make and extremely tasty! Honestly one of the best dessert’s I’ve made in a while and certainly one I’ll be coming back to. 

This recipe was inspired by Amanda Ducks’ double chocolate fudge brownie cookies. She has a lot of great recipes on her webpage so I would highly recommend browsing her site or checking out her YouTube page! All of the meals and snacks she makes are vegan and look delicious. Anyways without further ado here’s the recipe: 

Fluffy Vegan Hot Chocolate Cookies

    Ingredients

  • 1/4 cup dairy free heavy cream or milk
  • 2-3 tablespoons almond butter
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 chia egg 1 tbsp chia seeds mixed with 3 tbsp water
  • 3/4 cup whole wheat or regular flour
  • 1/3 cup hot chocolate mix
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp maple syrup
  • 1 cup vegan chocolate chips

  • Step 1

    Combine wet ingredients and mix until smooth. Add dry ingredients and whisk well until all lumps are gone. Fold in chocolate chips at the end.

    Bake at 350˚F for around 20 minutes until light and fluffy. Cool for a few minutes and serve with a glass of (DF) milk of your choice!
