I love my Top Ramen as much as the next guy, but after a whole week of midnight ramen munchies, I needed something a little different to satisfy my appetite. Enter: Ramen Pad Thai. Think 4am delivery pad thai quality with the instant ramen price – yeah, I’m serious. With just a couple extra ingredients you can take your dirt-cheap ramen from lazy to amazing.

Ingredients
- 1 package chicken or shrimp flavored ramen
- 1 egg
- ½ teaspoon fish sauce
- 2 tablespoon lime juice
- ¼ cup peanuts, chopped
- ¼ cup scallions, chopped
- 4-6 bean sprouts
Step 1
In the microwave, cook your noodles in water.
Step 2
In a separate bowl, crack your egg and beat until scrambled. Microwave until cooked.
Step 3
Chop up egg, set aside.
Step 4
Add egg, ½ ramen seasoning packet, fish sauce and lime juice to the bowl and mix together.
Step 5
Garnish with chopped peanuts, chopped scallions, bean sprouts, and one lime wedge.
