As we reach mid-summer, we crave those yummy breakfast treats that we all know will definitely add on some unnecessary weight to that beach bod we have worked day & night for! We see summer as a flashing red light to start working out, while trying so desperately to avoid mouth-watering ice cream, carnival treats, & popsicles! We look for all those how-to articles to make recipes that are healthy while adding in some personal flavor!

What if I told you there was a healthy, and absolutely mouth-watering, breakfast meal that only take 20 minutes to prepare? A meal that leaves you craving for more and questioning how something that tasty could be so healthy and leave you feeling so wonderful! In order to make this nutritious meal, you will need to get some spinach: a healthy source of vitamins, mushrooms, and mozzarella cheese.

Better get your pans and spatulas out to taste this filling meal for yourself!

Spinach, Mushroom, and Mozzarella Omelette

    Gather your ingredients.

    Crack as many eggs as you want (4 for one person) u0026 beat egg and egg whites in a small bowl.

    Remove the chalazae (the white, gooey, ropey thing that hangs onto the yolk) with a spoon or fork.

    Pour in 1/8 teaspoon of red pepper flakes.

    Mix in 1/4 teaspoon of salt.

    Get a pan u0026 a spatula u0026 pour 1/2 teaspoon of olive oil into the pan.

    Dice a 1/2 cup of fresh tomatoes.

    Tear u0026 rip spinach into small pieces.

    Cut u0026 gather a 1/2 cup of sliced fresh mushrooms.

    Add in the spinach u0026 tomatoes to the pan and keep them in the pan for 1 minute.

    Throw in the mushrooms into the mix.

    Pour in the egg u0026 pepper mixture into the tomatoes, spinach, u0026 mushrooms.

    Sprinkle 1-2 cups of shredded mozzarella.

    Flip over one side of the mixture with a spatula to create an omelette u0026 try not to create a rip like I did u0026 voila, you have yourself a delicious meal!
