Refresh Your Summer Dinners With This Lemon Basil Walnut Pesto

Pesto is a very versatile dish, you can mix any green with any kind of nut and put your own twist to it.

This pesto is made from walnuts, instead of the traditional pine nuts. You can really use any nut you like, but I prefer walnuts for this recipe. I am choosing to use both fresh basil and fresh mint. I am also adding a mix of fresh baby greens.

 

Lemon Basil Walnut Pesto

  • Prep Time: 5 minutes
  • Cook Time: 15 minutes

Ingredients
  • 2 cup baby greens of your choice (baby arugula, baby kale, baby spinach, etc.)
  • 1 cup fresh basil
  • 1/4 cup fresh mint
  • 2 cloves garlic
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1/2 cup olive oil
  • 1 cup walnuts
  • 1 lemon
  • 1 lb pasta

Step 1

Cook pasta. Save some of the pasta water for later.

Step 2

Combine ingredients in a blender or food processor.

Step 3

Mix the pesto in with the pasta. Add pasta water as a thinner if the pesto is too thick.
