Lamingtons: A Quick and Easy Australian Dessert

Let’s be honest — besides vegemite, how many Australian foods do you really know? There’s a lot of amazing foods from the land down under that you need to try, and lamingtons should be at the top of the list.

Lamingtons are sponge cake and jelly sandwiches coated in chocolate and coconut, and are super easy to make. Whether you have them as a dessert or a snack, you’ll definitely enjoy them.

Simple Strawberry Lamingtons

Ingredients
  • 3 golden sponge cakes
  • 1/4 cup strawberry jam
  • 3 cup chocolate icing
  • 3 cup shredded coconut

Step 1

Cut each sponge cake into 4 to make 12 squares total.

Step 2

Cut each square in half and spread jam on one half.

Step 3

Sandwich the 2 halves together.

Dip each piece in chocolate icing, making sure to coat the entire sandwich.

Afterwards, roll the sandwich in the shredded coconut until covered.
