Up Your Shabbat Game With These Sweet Potato Kugel Cups

Kugel is a baked pudding or casserole, most commonly made from egg noodles or potato. It's a traditional Jewish dish, often served on Shabbat. I made a new twist on the classic potato kugel with these sweet potato kugel cups, perfect for parties or events. Not only do sweet potatoes taste delicious, but they are also jam packed with vitamins.

Sweet Potato Kugel Cups

Ingredients
  • 2 pounds sweet potatoes washed and peeled
  • 1 large onion peeled
  • 2 eggs
  • 1 cup butter melted and cooled or margarine
  • 5 tablespoons all-purpose flour sub matzo meal for Passover
  • Salt and pepper
  • 1 cup minced scallions
  • Greek yogurt

Step 1

Preheat the oven to 350°F and prep muffin tin with 15 cupcake liners.

Using a cheese grater or food processor, grate sweet potatoes.

Using a cheese grater or food processor, grate the onion.

Combine the grated sweet potatoes and onion into a bowl. Use cheese cloth or paper towel to ring out excess moisture.

Step 5

In separate bowl, combine eggs, flour, butter, flour, salt, pepper and half the scallions. Once mixed, add in the grated sweet potatoes and onion.

Transfer mixture to cupcake liners and bake at 350°F for 45-60 minutes. The cups should be crisp and browned on top.

Top it with greek yogurt and the remaining scallions. Serve warm and enjoy.
