When the summer days get so hot that all you can think about is no-cook dinners and freezing cold desserts, make this recipe. These ice cream cones take the flavor of key lime pie and a cinnamon roll and put it into a salty caramel-coated sweet dessert. It comes from Top Chef alum Dale Talde who is back with his series All Up In My Grill. The show is in its fifth season on Tastemade, so you know it’s going to be good.

Key Lime Salted Caramel Ice Cream Cones

- In a deep saucepan over medium-high heat, cook the brown sugar, cream, corn syrup, and salt for 2 minutes without stirring. The caramel will start to bubble rapidly. Then swirl the pan gently to stir the caramel (instead of using a spoon), continuing to cook until the bubbles get larger and slower, 1 to 2 minutes. Turn off the heat and add the lime juice. Stir with a rubber spatula to combine.
- Preheat fryer or oil to 350F. Roll cinnamon roll dough into small balls. Fry to a golden brown. Roll cinnamon roll balls into the caramel and set aside while you make your icing.
- In a medium bowl, mix powdered sugar, lime juice and zest, and melted butter until incorporated thoroughly and smooth.
- Start with a cone and begin layering the caramel-coated cinnamon balls, icing, and ice cream in layers, finishing with more of the key lime salted caramel.
