Insanely Easy Chocolate-Covered Coconut Macaroons

You could say I’m a coconut fanatic. Coconut cream pie, Almond Joys, coconut cupcakes, coconut water, coconut shrimp.

It’s simple: coconut makes everything better.

The great news is that these macaroons are basically bite-sized coconut bliss. Drizzle them with chocolate for some extra decadence. And the best part is, they’re just two ingredients.

Coconut Macaroons

Ingredients
  • 2 packages sweetened coconut flakes
  • 14 oz sweetened condensed milk (1 can)
  • Chocolate chips

Step 1

Preheat oven to 350°F.

Step 2

In a large bowl, put coconut flakes and pour over sweetened condensed milk. Mix until well combined.

Drop spoonfuls onto a baking sheet lined with parchment paper.

Bake for 8-10 minutes until tips are golden brown.

In a small bowl, microwave chocolate chips in 30-second intervals until completely melted.

Step 6

Once the macaroons are done, immediately transfer to a plate and drizzle with the melted chocolate.
