No offense, but tomatoes can get a little boring. The key to sprucing up every tomato recipe you have? Roast them. This makes for the most insane caprese salad you’ll ever eat. You could use these as a replacement in your tomato soup recipe and have a new favorite meal.

Or, roast up some cherry tomatoes and toss them in pasta with some arugula and Parmesan cheese for the easiest date night meal ever. Endless possibilities. Here’s what you gotta do.

Roasted Tomatoes

    Ingredients

  • 10 Roma tomatoes
  • 1/4 cup extra virgin olive oil
  • 5 Garlic cloves
  • Balsamic Vinegar
  • Salt
  • Pepper

    Preheat oven to 275ºF.

    Cut tomatoes in half length-wise and scrape out seeds.

    Lay tomatoes on foil-lined baking sheet cut side up.

    Sprinkle tomatoes with garlic and top with olive oil, salt and pepper to taste, and a drizzle of balsamic vinegar.

    Roast for two hours.

    #SpoonTip: This step is flexible, you can up your open temp to 325° for an hour to reduce cooking time, but make sure you add your garlic in the last 10 minutes. But be forewarned: lower and slower is the way to go.
