What makes this risotto recipe so great is that as long as you’ve got rice and milk — regular or coconut for those of you trying to be healthy — you’re only minutes away from satisfying that sweet tooth. No need to go out and buy any ingredients, just open your fridge and use up those leftovers.

Ingredients
  • 1 cup leftover rice
  • 1/2 cup canned coconut milk
  • 1/4 cup shredded almonds
  • Chocolate syrup
  • Mixed fruit
  • Chocolate chips

Step 1

Microwave rice for 1 minute in microwave-safe bowl.

Step 2

Measure out coconut milk and microwave for 2 minutes.

Pour warmed coconut milk over rice.

Stir until the rice and coconut milk are combined.

Separate mixture into 4 bowls and pour chocolate sauce over.
