Spoon UIUC teamed up with Food & Wine magazine to increase awareness about the problem of food waste on our campus. With a microgrant of just under $100, we created 10 original recipes to show you how you can transform leftover late-night eats into something equally amazing the next day.
As a college student, pizza is a main food group. We all get the occasion (or rather frequent) delivery at 3 am of a large cheese pizza for one. However, we sometimes get bored of the hum-drum leftover pizza heated up in the microwave. So instead of eating just any leftover pizza, why don’t you give it a little more PIZZAzz and make it an EGGcellent meal?
Pizza Scrambled Eggs
- Prep Time:10 minutes
- Cook Time:5 minutes
- Total Time:15 minutes

- 3 eggs
- 2 pizza slices
- 2 tablespoon milk
- 1 teaspoon Italian seasoning
- 1/8 teaspoon onion powder
- 2 tablespoon vegetable oil
- Salt and pepper, to taste
- Any veggies (optional)

Step 1
Scrape the cheese and toppings off of the pizza. Discard the crust and bread part of pizza. Heat the toppings and milk in a small sauce pan over medium heat until they have combined to a soft consistency. Remove from heat.

Whisk eggs, onion powder, Italian seasoning, salt, pepper, and any veggies; for me, I added spinach and red bell pepper.

Step 3
Heat oil over medium heat in a skillet. Pour eggs and cook without stirring for 1 minute. Then add pizza toppings and constantly stir, until eggs reach desired consistency. Remove from heat.
