How to Make the Perfect Zucchini Corn Fritters

Zucchini and other squash are fresh summertime vegetables. This recipe for zucchini corn fritters is light and fluffy and is perfect for entertaining. I paired them up with a creamy grain mustard sauce, but you can use whatever you like. An herb tahini sauce would also go great with this recipe.

Zucchini Corn Fritters

Ingredients
  • 3 zucchini
  • 2 cup corn
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 tablespoon baking powder
  • 2 cup all purpose flour
  • 3 tablespoon unsweetened almond milk
  • sunflower seed oil (for frying)

Step 1

Shred or finely chop up zucchini. Add to a bowl with the corn, flour, baking powder, salt, pepper, garlic powder, and paprika. Mix until everything is well combined.

Step 2

Add the almond milk to the bowl. Mix until you have a consistent and thick batter.

Step 3

Form the batter into small patties.

Step 4

Add the oil to a pan and fry for approximately 5 minutes on each side.

Step 5

Let cool for a few minutes before serving. Pair with your favorite dipping sauce.
