Dessert Will Never Be the Same After Making Strawberry and Banana Summer Rolls

I have a sweet tooth like no other. I eat dark chocolate daily and make banana nice cream almost every week. But after eating the same treats over and over and over, it can get a bit dull. So, you can thank my boredom for this hybrid of two of my favorite things: Summer rolls and dessert.

The summer rolls are filled with sweet, sticky brown rice and fresh fruit. And of course, summer rolls wouldn’t be complete with dipping sauce. But wait! Because I love you, I made two.

Velvety chocolate sauce and creamy peanut butter sauce… It’s almost too much to handle. As an added bonus, these summer rolls are healthy, gluten-free, dairy-free, and vegan if you use agave instead of honey. Now let’s get wrapping.

    Slice the banana into small medallions and halve the strawberries.

    In a medium-sized bowl, mix together the brown rice, 1/4 cup honey, and 1 teaspoon cinnamon. Set aside.

    In a separate, microwave-safe bowl, mix together the peanut butter, 1 tbsp honey, and milk. Microwave for 20 seconds, stir, and set aside.

    In another microwave safe bowl, mix the chocolate, coconut oil, and 1 teaspoon cinnamon. Microwave in 15 second intervals, stirring after each, until the mixture is fully combined. If you like a thinner sauce, add a splash of milk.

    It’s time to assemble your summer rolls! To do this, first set up a station including a bowl of lukewarm water and a large plate.

    Take a rice wrapper and dip it in the water for roughly 4 seconds, then quickly move it to your plate. Now, put a spoonful of brown rice in the middle of the wrapper. Then place the fruit combination of your choice on top of the brown rice.

    #SpoonTip: Don’t go overboard with the fillings, otherwise you won’t be able to roll the dessert properly.

    To make the roll, gently fold over the top and bottom part of the rice wrapper. Then fold each side of the wrapper over so the rice and fruit are completely enclosed. Repeat this process with the rest of the ingredients and then enjoy! You can eat the sauces separately or go crazy and mix them together.
