As a college kid, it’s hard to get breakfast in before that 8 AM financial accounting class. So, I have a proposition: Spiced banana pear muffins. Make a batch of these guys Sunday night, and you’ve got a grab and go breakfast ready for every day of the week. These muffins will be waiting for you at 7:57am when you’re running out of your apartment for class. Be careful though, your roommates might snatch ’em before you do.
Spiced Banana Pear Muffins

- 1 ripe banana
- 1 ripe pear
- 2 cup flour
- 1 teaspoon baking powder
- 2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground clove
- 1/8 teaspoon cardamom
- 1/2 teaspoon salt
- 3 tablespoon coconut sugar
- 1 egg
- 1 cup milk
- 1/2 cup butter, melted
- 1/2 cup rolled oats

Preheat oven to 375°F.

In a small bowl, mash the ripe banana and set aside.

Peel and dice the pear, then set aside.

Mix the flour, baking powder, spices, salt, and 2 tablespoons sugar in large mixing bowl.

Mix in the egg, milk, and ¼ cup melted butter.

Add mashed banana and chopped pear.

Place cupcake liners in pan and spoon batter into pan.

In a small bowl, combine rolled oats, ¼ cup melted butter, 2 tablespoons coconut sugar, and a dash of cinnamon.

Spoon oat mixture onto muffins and bake in oven for 45 minutes.
