Peanut Butter Caramel Oatmeal Cookie Bars

- 2 cup flour
- 2 1/2 cup old-fashioned oats
- 1 1/2 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/3 cup vegetable oil
- 2 eggs
- 1 tablespoon vanilla
- 2 cup mini chocolate chips
- 3/4 cup peanut butter
- 3/4 cup caramel ice cream sauce

Preheat oven to 350º F.

Spray a 9×13 inch baking pan with non-stick cooking spray.

Add the flour, old-fashioned oats, brown sugar, baking soda, and salt to a large bowl and mix until combined.

Add the oil, eggs, and vanilla to the dry ingredients in the bowl and mix until just combined.

Stir the chocolate chips into the dough.

Microwave the peanut butter and caramel sauce in a small bowl for 20 seconds to soften the ingredients, and then mix them together until well combined.

Spread half of the cookie dough into the pan.

Pour the peanut butter and caramel sauce mixture over the cookie dough and smooth it over until the entire cookie dough layer is covered.
