How to Make Mini Crispy Loaded Potato Bites

So we all agree, babies are always more adorable and not as scary as adults, right? Well these loaded baby potatoes will always be one to cheer you up when you see them, especially if you’re like me and you have a soft spot for all miniature versions of things. And maybe when you’re out of your state of awe, you can scarf them down like the pigs we all know we are.

Crispy Loaded Potato Bites

  1. Preheat oven to 400°F.

  2. Line a large baking sheet with aluminum foil.

    Make several long cuts through each potato, being careful not to cut all the way though.

    Place the potatoes on the baking sheet.

    Brush each potato with olive oil and sprinkle with salt.

    Bake for 30 minutes, or until potatoes are tender.

    Place cheese squares in between the cuts on each potato.

    Let the cheese melt on its own, this shouldn’t take long!

    #SpoonTip: if you want the potatoes to still be piping hot when you serve them, put them back in the oven for a few minutes before the next step.
