The classic corn dog has been taken off a stick and re-amped into muffin form. The texture of the cornbread is a perfect combo for the lil’ weenie that’s baked in the muffin goodness. Dip them in ketchup and mustard and be sure to share with your home dogs.

Corn Dog Mini Muffins

  • 1/2 cup melted butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1 cup cornmeal
  • 1 cup flour
  • 1/2 teaspoon salt
  • 8 hot dogs

  • Step 1

    Preheat oven to 375ºF. Combine butter and sugar in a bowl and whisk to combine. Add eggs and buttermilk and whisk to incorporate.

    Add baking soda, cornmeal, flour and salt. Stir to combine.

    Spray a mini muffin tin very well with cooking spray. Pour 1 tablespoon batter into every cup, as well as a hot dog bite.

    Bake for 10-15 minutes, or until cornbread is golden brown. Cool in mini muffin tin for 5 minutes before serving.
