How to Make Low-Carb Spinach Soft Taco Shells

This easy recipe will get you a healthy and hearty meal on it’s own in 30 minutes. Or feel free to fill the shells up with your favorite fixin’s and have a plate of guilt free tacos.

Low-Carb Spinach Soft Taco Shells

Ingredients
  • 5 oz baby spinach
  • 1 cup ice
  • 1/2 cup shredded cheese
  • 4 tablespoon oat bran
  • 2 eggs

Step 1

Place spinach in a bowl and cover with boiling water. Let sit for 2 minutes then place it directly onto the ice. Dry the spinach with a paper towel and finely chop.

Step 2

Mix the spinach, cheese, oat bran, and eggs together .

Step 3

Place on parchment paper lined cookie sheet. Bake for 20 minutes at 400°F.
