I love oatmeal, and I am a huge fan of overnight oats because they are easy to make and can be enjoyed in a variety of flavors. I accidentally created this recipe one morning when I decided to add some coconut date rolls I had recently purchased into my already prepared overnight oats. After one bite, I was instantly in love. As an added health bonus, the ingredients in this recipe are powerhouse foods. Greek yogurt contains protein and healthy fats. In addition, bananas and dates are great sources of potassium. For those who are like me and love cookie dough more than the actual cookies themselves, here’s some healthy cookie dough you can indulge in every morning.

#Spoon Tip: For this recipe, you can either buy coconut date rolls or make your own with this recipe– almonds are optional!

    Grab a storage container for your oatmeal- mason jars work perfectly.

    Pour in 1/2 cup of dry rolled oats.

    Add 1/2 cup of water. This amount can vary depending if you want your oats more or less thick (more or less water).

    Add in 1/4 cup of Greek yogurt. Again, depending on the thickness you want for your oats, this amount can vary.

    Cut a ripe banana into little pieces and add into your jar.

    Mix all of the ingredients together, and then leave your jar in the refrigerator overnight.

    Good morning! Grab your jar from the fridge and pour your creamy oats into a bowl.

    Get two coconut date rolls.

    Cut up the rolls into smaller pieces and roll them into even smaller balls.
