Peel and dice the three sweet onions.
(Yellow onions can be used if sweet onions are not available).
Add the olive oil to a 6 quart pot or larger on medium heat.
Add the onions and cook for 5 minutes stirring frequently.
Add the garlic and cook for an additional 2-3 minutes. It is very important not to burn the garlic, lower the heat if needed.
Add in the cans of tomatoes and hand mash the larger chunks.
(*IMPORTANT* If you do NOT have an immersion blender, blend the tomato cans until they are at the desired consistency before adding them to the pot).
Add the salt and stir well.
Add the basil (to taste). I used about 2-3 handfuls of fresh basil cutting them chiffonade style.
(If fresh basil isn’t available, use about 1/2 to 1 tablespoon of dry).
Stir in the basil, reduce the heat, and cover and simmer for an hour, stirring occasionally.
Blend the sauce using an immersion blended, until you reach the desired consistency.
(if you blended the cans in step 5, skip this step).
Cover and cook on low heat for at least one more hour.
(If you choose to add meat at this step, cook for at least 3 more hours).
