How to Make Cranberry Oat Bars

These Oats & Honey Cranberry Bars just might beat out your favorite boxed variety. Granola bars are the classic summer activity snack, a favorite among hikers and cyclists. Just simply packing one along is quite likely to inspire some sort of adventure. Pack wisely, and be sure to enjoy these granola bars while squeezing out the last bits of summer fun. You can switch out the dried cranberries for any kind of dried berries. Oats & Honey Cranberry Bars

  • Total Time: 30 minutes

Ingredients
  • 1 1/2 cup rolled oats
  • 1/2 cup Rice Krispies
  • 3 tablespoon cornmeal
  • pinch of salt
  • 1/4 teaspoon baking soda
  • 1/4 cup honey
  • 2 tablespoon coconut oil
  • 1/2 tablespoon brown sugar
  • 1/4 cup dried cranberries

Step 1

Preheat oven to 350°F.

Cover a 9×9-inch baking dish with parchment paper and oil generously.

Mix up oats, Rice Krispies, cornmeal, salt and baking soda in a medium mixing bowl.

Mix the honey and coconut oil in a microwave-safe bowl.

Microwave honey and coconut oil for 30 second, then stir to combine.

Add in brown sugar and stir to dissolve.

Step 7

Mix the honey mixture in with the granola.

Add in the cranberries and mix.

Step 9

Pour the oats into the baking dish, and press down hard on the granola.

Step 10

Bake for about 25 minutes, until the granola has turned golden.

Step 11

Remove the granola from the oven and let cool, then cut into bars.
