Instructions

  1. In a mixing bowl, add 1 packet of the unflavored gelatin and 1 packet of strawberry Jell-O gelatin into 1 cup of hot water. Stir until completely dissolved, then let it sit for 5 minutes. Stir in the strawberry vodka.

  2. In a small pan, place a few drops of oil and wipe with a paper towel. Coat the pan with a very thin layer of oil. Pour in the strawberry float mixture, and chill in the refrigerator for 2 hours or overnight. Ensure that it is level.

  3. After the float layer has firmed up, add 4 packets of gelatin into 1 cup of hot water slowly while stirring until completely dissolved. Add the sugar and coconut milk into the gelatin mixture, stirring well.

  4. Pour the coconut milk mixture over a spoon on top of the strawberry float layer. Return to the fridge and ensure the pan is level. Chill overnight.

  5. When ready to serve, cut into squares or shapes with cookie cutters and carefully remove with a small spatula. Garnish with a strawberry if desired and enjoy!
