How to Make Chocolate Chip Zucchini Muffins

If you are trying to eat more vegetables but don’t like the taste, this recipe is for you. Don’t let the zucchini scare you. It simply makes these muffins more moist. When you bite into the muffin, all you can taste is chocolate. Move over blueberry muffin, there’s a new sheriff in town.

Chocolate Chip Zucchini Muffins

  • Prep Time: 20 minutes
  • Cook Time: 15-20 minutes
  • Total Time: 35-40 minutes
  • Servings: 24-30 muffins

Ingredients
  • 3 eggs
  • 1 cup vegetable oil
  • 2 teaspoon vanilla extract
  • 2 cup sugar
  • 3 grated zuchinni
  • 2 1/3 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup chocolate chips

Step 1

Preheat oven to 350°F.

 

Step 2

Put cupcake liners in muffin tins.

 

Step 3

Grate the zucchini.

Step 4

Mix the eggs, oil, vanilla extract, and sugar together in a large bowl, and add in the zucchini.

Step 5

Combine flour, cocoa powder, baking soda, cinnamon, salt, and baking powder in another bowl.

Step 6

Add the dry ingredients to the wet ingredients.

Step 7

Stir in the chocolate chips.

Spoon batter into cupcake liners.

Step 9

Bake for 15 minutes or until a wooden toothpick inserted into the center comes out clean.

 

Step 10

Cool muffins on a wire rack for 10 minutes.
