Chocolate Chip Biscotti Dipped in Chocolate and Bacon

People write off biscotti as a dry and dense pastry, but what else do you expect from a biscuit that means “twice-baked” in Italian? Give biscotti a chance and make them yourself.

Spice these things up with the addition of bacon and chocolate for a sweet and savory twist. These cookies are a cut above your average chocolate chip biscotti and make a great gift that’s sure to impress. Make sure to eat with your favorite cup of coffee or tea.

Chocolate, Almond and Bacon Biscotti

    Cream the butter and sugar with an electric mixer for 5 minutes. Add the eggs and vanilla and beat for another 2 minutes.

    Add the flour and baking soda and combine with a spatula. After combined, mix in the almonds, a cup of the chocolate chips, and 1/2 cup of the bacon.

    Wet your hands with water and form the dough into a flat log on a cookie tray. Bake at 300ºF for 30 minutes.

    Let cool for 10 minutes, slice into 1 inch slices, and bake for another 10 minutes or until golden.

    In 30 second increments, heat the chocolate in a microwave until melted. Dip the end of each cookie in the chocolate and sprinkle on some bacon. Let cool and eat with your favorite hot beverage.
