Potatoes are dope. Unfortunately, a lot of doctors recommend diets that eliminate complex carbohydrates (found in potatoes) to help prevent various diseases and negative health issues. This means no potatoes (among other things). If this is you, or you are someone simply looking to sneak in more vegetables, this recipe will be a game changer. You can thank me later.

Cauliflower Mashed Potatoes

  • Prep Time:10 minutes
  • Cook Time:20 minutes
  • Total Time:30 minutes

  • Medium

    Ingredients

  • 1 cauliflower head
  • 4 tablespoon water
  • 3 tablespoon coconut milk or any milk of your choice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon coconut oil or butter

  • Step 1

    Cut and clean the cauliflower.

    Fill a large pot with 3 inches of water and boil.

    Steam the cauliflower over the pot in a steamer for roughly 20 minutes or until very soft.

    #SpoonTip: If you don’t have a steamer, you can use a strainer like I did.

  • Step 4

    Mash the steamed cauliflower with a potato masher until it looks like the consistency of the photo below.

    Use a blender or food processor to make the cauliflower smooth.

    Add your milk of choice and water to make blending easier.

    After mixture is smooth, blend in garlic, salt, and pepper.
