For a long time I had no idea how to use tahini other than in hummus. The taste is reminiscent of the nut butters I eat copious quantities of, it’s no surprise this is my new favorite salad dressing.
The kind of nutrients you get from something green and leafy like a salad can only be utilized by the body with the accompaniment of good fats. Tahini is made from ground sesame seeds, which are high in unsaturated fats, while also being a complete protein. Lemon juice is the other main ingredient in this dressing, moderate quantities keeps your insides alkaline.

Instructions
Pour tahini into a small bowl. Juice a lemon into that same bowl.
Add salt and pepper, begin to whisk.
The mixture should look like a thick paste, add water to thin until desired consistency is achieved.
Serve up and enjoy, or store in the fridge for later use.
