Earth Day cupcakes are a fun dessert to have if you’re wondering what you want to do on such an un-celebrated holiday. But seriously, please do something nice for Earth Day. Whether it be handing these beautiful cupcakes out to some people who don’t get the privilege of having sweets, or any food at all, or just making these to promote the celebration of Earth Day, do something nice. We all have to share this big world, and it needs us to keep it healthy.
#SpoonTip: Gel frosting tastes awful in any quantity, and especially in large amounts. Be careful how much you use.
Earth Day Cupcakes
Ingredients
Instructions
Combine your cake mix with the ingredients needed described on the box; in my case, 1/2 cup vegetable oil, 1/2 cup water, 4 eggs.
Divide the cake batter into two separate bowls.
Add 2-3 drops of food coloring to each bowl, one bowl only green food coloring and the other only blue food coloring.
Fill a muffin pan with cupcake liners.
Alternating colors, drop small spoonfuls of cake batter into the cupcake liners. Fill the cupcake liners half full.
Bake the cupcakes for 15-20 minutes at the temperature the box of cake requires.
Let the cupcakes cool, then use a small heart-shaped cookie cutter to cut small hearts into the center of each cupcake.
Fill each heart-shaped hole with red frosting, being careful to stay within the lines.
