Grilled cheese is probably my favorite comfort-food lunch. Just the thought of melted cheese in between slices of crusty bread is enough to distract me from my fall semester grades. And one of the coolest things about grilled cheese is you can easily reduce much fancier and elaborate meals to a simple sandwich: Just take their core ingredients and melt them together with cheese on compatible bread.
Alright enough talk, let’s get cooking.
French Onion Soup Grilled Cheese

- Total Time: 45 minutes

Combine 2 tablespoons butter and garlic in a bowl and microwave for a minute.
Cook onions in remaining butter on medium-low heat for 30 minutes, stirring occasionally.
Add wine to deglaze, cook for another minute until most of the wine has evaporated.
Season with salt and set aside to cool.
On one piece of bread stack half of your cheese, followed by your caramelized onions and then the rest of your cheese.
Top with another slice of bread, and coat with half of the garlic butter.
Place the sandwich butter-side down on a pan and let cook on medium heat for about 5 minutes or until underside is brown.
Apply rest of the butter to top of sandwich and flip. Let cook for another 5 minutes or until underside is brown.
Take the sandwich off the stove, cut in half, and top with Italian seasoning or minced parsley because you fancy like that.
