How to Make a Cinnamon Apple Ice Cream Sandwich

I call this yet another product of my “yes, you can have it all” attitude. Cool ice cream, chewy cookies, chocolate and peanut butter chips and a gooey cinnamon apple core – it doesn’t get much better than that combo.

#SpoonTip: Try not to let your roommates eat all the cookie dough before you’ve finished frying the apples.  

Chocolate Peanut Butter Chip Ice Cream Sandwiches with Cinnamon Apple Cores

  • Cook Time: 15 minutes
  • Total Time: 26 minutes

Ingredients
  • 1 package of cookies (any flavor)
  • 1 apple
  • 1/4 cup chocolate and peanut butter chips
  • 1 tablespoon cinnamon
  • 1 tub of ice cream (caramel or vanilla flavor)
  • 1 tablespoon honey
  • 1 tablespoon coconut oil (for frying)

Step 1

Heat coconut oil in a pan and add chopped apple pieces, cinnamon and honey. Fry until apples have softened.

Step 2

Bake cookies according to package directions and chill in the freezer.

Step 3

Stack one scoop of ice cream on a cookie. Make a mini hole in the ice cream with a teaspoon and fill with warm apple mixture.

Step 4

Stack another scoop of ice cream and top with another cookie.

Step 5

Roll in chocolate and peanut butter chips and serve.
