How to Make 4-Ingredient Low Carb Cloud Bread

While carbs do give you energy, not every carb is created equal. Processed carbs, such as white bread, pasta, and pretzels have been processed during food production resulting in a low nutrient food. Americans tend to over consume processed carbs. These carbs have a negative effect on the body such as pre-diabetes, weight gain, and undesirable blood lipid levels.

Since learning these facts about carbs, I have been trying to eat less of these “processed” carbs. This is a little hard to because I love eating pasta and bread.  I couldn’t believe myself when I saw a low carb cloud bread recipe while I was browsing Pinterest the other day. When I looked into it further, I was shocked that it was so easy to make, and had only a few ingredients.

I decided to put my own spin on the recipe using only ingredients that I had on hand in my dorm fridge. The result was a super simple cloud bread recipe that only requires 3 ingredients! It’s also gluten free and diabetic friendly as well!

Low Carb Cloud Bread

  • Prep Time: 15 minutes
  • Cook Time: 30-45 minutes
  • Total Time: about 1 hour
  • Servings: makes about 7 slices

Ingredients
  • 3 large eggs
  • 3 tablespoon Greek yogurt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon garlic powder (optional)

Step 1

Preheat your oven to 300ºF. Prepare a baking sheet with parchment paper.

Separate egg whites from egg yolk. If you don’t know how to do that, check out this article.

Step 3

Mix Greek yogurt with egg yolks together.

Step 4

Add baking soda to egg whites.

Step 5

Beat egg whites with an electric whisk until still peaks form (about 5 minutes). If you are using a hand held whisk this takes about 15- 20 minutes.

Step 6

Gently fold in egg yolk/ yogurt mixture in the egg whites.

Step 7

On the baking sheet, scoop about 3 tablespoons of batter and smooth it over with a spoon or spatula until it is a circle shape. Repeat about 7 times or until batter is done.

Step 8

Bake for about 30 minutes in the oven or until the “bread” is golden in color and has cracks.

Step 9

Remove from oven and top with your favorite toppings. I used some chopped garlic and olive oil.
