Traditional lemon chicken is breaded, deep-fried, and covered in a sugary sauce. This healthy lemon chicken is fresh, tasty, and super easy. And you probably have most of the ingredients in your kitchen already.
By frying the chicken in scant oil you cut the calories down, and using fresh lemon juice as opposed to the classic sweet stuff contributes to lower sugar and better flavor. Play around with the quantities of honey and Sriracha to spice it up or down to your taste preference.

- 3/4 cup chicken or vegetable stock
- 2 lemons both juiced and 1 zested
- 3 tablespoons honey
- 2 tablespoons arrowroot flour or cornstarch
- 1 teaspoon fresh ginger
- Thinly-sliced green onions
