Winter is coming and sometimes you need something hardy and easy that takes little energy to make—school is stressful. These easy potatoes work well for any time of day and make great leftovers. Also, potatoes are super cheap and filling!
This recipe is simple and you can easily make them in a dorm room. You will have everyone asking how you made such a meal and you can smile knowing it took almost no effort, while pretending you worked for hours.

Put 2 to 3 tablespoons of butter in a pan with salt, pepper, and any other flavors you like—I added a seasoned salt and some garlic paste from a tube. Turn the heat on low. If you want to make this vegan, simply substitute the butter for olive oil.
Wash and cut your potatoes. I used about ten or so little potatoes. Don’t worry if you make too many, as these are super tasty the next day too!
Make sure the butter and the seasonings are mixed and then put on the potatoes. Stir the potatoes so they all get coated evenly with the butter.
Fill the pan with water, so that the potatoes are covered all the way.
Let all the water boil away. This can take a while, so I usually work on some homework (and by that I mean I go on Facebook).
Once all the water is gone and the u0022liquidu0022 left is heavy, almost gravy-like, pull off the heat and put on a plate.
Enjoy! You can add spinach, bacon, green onions, cheese, or anything else you can think of to top of these potatoes or enjoy them on their own!
