There’s nothing better than having a hot tray of fudgy, chocolatey, rich brownies to help you bear cold weather and/or bad days. These healthy sweet potato brownies are a great stand-in for regular brownies, only they don’t spike your blood sugar or make you feel sick after eating 100 of them.

Healthy Sweet Potato Brownies

    Ingredients

  • 1 1/2 cup almonds
  • 1 teaspoon salt
  • 2 boiled sweet potatoes
  • 1/4 cup honey
  • 1/2 cup cacao powder
  • 12 pitted medjool dates
  • 2 teaspoon vanilla extract (optional)
  • 3 tablespoon powdered sugar (optional)

  • Step 1

    Preheat your oven to 350°F.

  • Step 2

    Blend almonds or crush using motor and pestle to make almond meal.

    #SpoonTip: You can skip this step by using almond meal or almond flour.

    In a bowl, mix cacao, ground almonds, honey, and salt.

    Combine sweet potatoes, dates, and vanilla (optional) in blender and blend.

    Add sweet potato puree to bowl and mix.

    Line a baking dish with parchment paper and add mixture to dish.

  • Step 7

    Bake for 20 minutes and allow to cool for 10 minutes at room temperature. Dust with powdered sugar and serve.
