With the limited variety of salad bar toppings, it’s easy to rely on the same few ingredients for a quick side salad. Salty feta, fresh vegetables and a simple dressing make Greek salad a refreshing alternative to the typical heavy winter meal.

Ingredients:
3 slices tomato, quartered
3 slices cucumber
3 slices bell pepper
3-4 slices red onion
Feta
Black olives
1 grilled chicken breast, sliced
Red wine vinegar
Olive oil

Directions:
1. Whisk red wine vinegar and olive oil together in a bowl with a fork to make dressing.
2. Toss vegetables and feta with dressing.
3. Top with sliced grilled chicken.
