This salad is refreshing to say the very least. Crisp butter lettuce, crunchy fennel, a bursting bite of juicy grapefruit topped with ribbons of sharp Pecorino cheese and a drizzle of honey vinaigrette. If that eloquent description doesn’t make you want to eat this, I don’t know what will.

We made this salad to pair with a crisp mineral wine with fruity flavors curated by Wine Awesomeness. Food and drank twins.

Fennel Salad with Grapefruit

  • 1 bulb fennel, thinly sliced
  • 1 head butter lettuce
  • 1/2 cup olive oil
  • 1/4 cup champagne vinegar
  • 1 teaspoon honey
  • 1 grapefruit, segmented
  • Pecorino Romano cheese
  • Step 1

    Whisk olive oil, champagne vinegar and honey until well incorporated.

  • Step 2

    Toss sliced fennel and torn butter lettuce in dressing.

  • Step 3

    Decorate those dressed leaves with grapefruit and shaved Pecorino Romano cheese.
