Salads have never been my go-to meal. However, after watching endless hours of TikTok and finding a love for cooking, salads have now become a staple in my diet. By adding in my favorite toppings and making homemade salad dressing, I have learned to love its crisp texture and mixture of sweet and salty flavors. Emma Chamberlain's Erewhon Style Kale Salad

Ingredients
  • 1 bag chopped kale
  • 1 ripened avocado
  • 1 can organic great northern beans
  • Roasted and unsalted sunflower seeds
  • Shelled hemp seeds
  • Light taste olive oil
  • Salt
  • Pepper
  • For the dressing:
  • 3 tbsp lemon juice or one whole lemon
  • 2 tbsp maple syrup
  • 1 tbsp organic yellow mustard
  • 4 tbsp light taste olive oil

Step 1

Pour chopped kale into a strainer and wash well. Dry off kale and place in a large bowl.

Drizzle desired amount of light taste olive oil on kale.

Use your hands to massage the kale. Make sure all the kale is dressed well in the olive oil.

Strain the liquid from the organic great northern beans. Pour onto the bed of kale.

Slice the avocado and distribute it evenly in the bowl.

Add in your desired amount of roasted and unsalted sunflower seeds and shelled hemp seeds. Sprinkle salt and pepper to taste. Mix salad together.

For the dressing, use lemon juice or one whole lemon and squeeze it into a bowl.

Add in the maple syrup, mustard, and olive oil. Whisk together.

Pour the desired amount of dressing onto kale salad. Mix salad.

Add more sunflower seeds, hemp seeds, or any other toppings to add an additional flavor or a crunch. Serve and enjoy!
