Easy Strawberry Banana and Walnut Oatmeal Bake

I’m pretty sure that I could eat oatmeal-anything for every meal, snack and dessert of my life. Basically, I do just that: chocolate mocha protein pancakes with oatmeal in them are my rockin’ go-to for brunch with my housemates. I mean, oatmeal has so many great health benefits. It’s basically crack. Actually, you could apparently turn your oatmeal into “crack” with sweetened condensed milk. I prefer almond milk, but I mean, to each his own. Test it out and lemme know.

This easy healthy and filling oatmeal bake is perfect for your weekend brunch with friends or even as a yummy dessert. Make it with any choice of fruits and you will be sure to convince your friends that you are a pro-chef in no time.

    Preheat the oven to 375ºF. In an 8×8 inch glass dish, layer bananas with cinnamon and honey and then top with craisins and strawberries.

    Cover with tin foil and bake in the oven for 15 minutes. Meanwhile, in a medium-sized bowl, mix together oats, walnuts, salt, nutmeg, cardamom and baking soda.

    In another bowl, whisk together egg and milk.

    Remove dish from the oven. Pour oatmeal mixture evenly over fruit. Then spoon liquid mixture evenly throughout.

    Bake for 30 minutes. Serve in ramekins or bowls.
