As much as I love to cook, sometimes I don’t have the patience to choose a recipe, labor over the cook top, and spend a whole lot of time making something that I will inevitably finish eating in, like, 6 minutes. Just because I want something quick, however, does not mean I have to sacrifice quality for convenience.
Cue Trader Joe’s entrance. Once again, my homie knows how to get it done. This lentils recipe is not only filling and delicious, but it is so easy, I could do it half asleep (which I did, not too long ago).

Bruschetta Lentils with Sausage
Ingredients
Instructions
Remove the sausage from its packaging. Cook over medium heat for 12-14 minutes, flipping halfway through.
As the sausage is finishing up, poke three holes in the lentil plastic packaging and microwave on high for 2-3 minutes.
Remove the sausage from the pan, and slice into bite-sized pieces.
Dump the lentils, sausage, feta cheese, and bruschetta sauce into a bowl. Mix.
Feast.
