We all know the common complaints about cooking and eating healthy in college: not enough time, no idea how to cook, healthy food tastes bad… the list goes on.  Luckily, most of these obstacles are completely avoidable.  This easy 15-minute chicken recipe only requires one pan and cheap ingredients to make the juiciest, most flavorful chicken of your life.  It’s simple enough to make for any meal, but it’s delicious enough for any occasion.

    Preheat oven to 375 F

    Season chicken with cumin, curry powder, salt, pepper, and garlic powder.

    Heat olive oil in skillet over medium heat.

    Sear chicken in skillet for 4 minutes on each side, then bake at 375 for 6 minutes. Remove chicken from oven.

    Combine honey, lime juice and zest, and soy sauce or aminos, and pour into pan until reduced to a thick sauce.

    Glaze chicken with sauce and serve.

I might be biased, but I could probably eat this chicken for every meal for the rest of my life.  The combination of sweet honey, citrus, and savory coconut aminos makes for the some of the best chicken you will ever taste. Searing and then baking the chicken reduces the cooking time and creates a crispy outside and juicy inside.  I hope you enjoy this chicken as much as I do.
