This simple, flavorful, and HEALTHY blueberry crisp is your solution. The best part? It tastes great and you feel great all December long. 

Blueberry Crisp

    Ingredients

  • Base:
  • 4 cups fresh blueberries
  • 2 tablespoons coconut sugar
  • 1 tablespoon maple syrup
  • 1 tablespoon almond flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pure vanilla extract
  • Topping:
  • 3/4 cups pecans chopped
  • 1/2 cup gluten free rolled oats
  • 1/4 cup almond flour
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons maple syrup
  • 1/4 cup coconut oil

  • Step 1

    Preheat oven to 350° Fahrenheit. Grease an 8-inch square baking pan with coconut oil. Wash four cups of blueberries. Set aside.

    In a large bowl, add all filling ingredients: blueberries, coconut sugar, maple syrup, almond flour, cinnamon, and vanilla. Using a rubber spatula, mix and stir until blueberries are fully coated and sugar has dissolved.

    Evenly pour the filling mixture into the baking pan and set aside.

    In a separate bowl, add all topping ingredients. Use a fork to stir and fold together until crumbles form.

    Spoon this mixture over the top of the blueberries in the baking pan.

    Bake for 40-45 minutes, or until golden brown on top.

    Allow to cool for 10-15 minutes. Enjoy with a scoop of your favorite ice cream!
