Decadent Banana Cream Pie for the College Budget

As financially-limited but thrifty college students, we’ve already made a list of cheap-to-buy and easy-to-keep fruits, and have also discovered a myriad of different ways to repurpose these fruits.

Topping that list off is, of course, the banana.

From banana pancakes to ice cream, bananadoodles and more, our team at Spoon has mastered the art of cooking with bananas—almost. Of course, the one recipe that we hadn’t tried yet was this divine banana cream pie.

Made almost completely from kitchen staples, this pie is simple and straightforward, but its rich and decadent taste is suitable for almost any summer party.

Simple Pie Crust

  • Prep Time: 30 minutes
  • Cook Time: 15 minutes
  • Total Time: 45 minutes
  • Servings: 8-9 servings
  • Medium
Ingredients
  • 2 cup all-purpose flour
  • 1/4 teaspoon salt (scant)
  • 1 3/4 teaspoon brown sugar
  • 3/8 teaspoon baking powder
  • 7 tablespoon vegetable oil of choice
  • 1/4 cup cold water

Step 1

Preheat oven to 375° F.

Step 2

Combine the flour, salt, sugar and baking powder in a mixing bowl, and whisk.

Step 3

In a separate bowl, whisk together oil and water. (We used canola oil, but olive, vegetable or peanut oils also work.)

Step 4

Add the oil and water to the dry ingredients. Mix with a fork until combined. The dough will be very crumbly.

Step 5

Pour the dough into a pie pan, and pat down flat around the entire pan. Spoon tip: Use a measuring cup to help flatten the bottom.

If you’re feeling fancy and have enough dough, you can crimp the edges with a fork. (We didn’t have enough dough.)

Step 6

Blind bake the pie crust for 15 minutes. There is a proper way to do so, but popping this crust directly into the oven also works just fine.

Be sure not to bake it for too long—the crust can become hard.

Banana Cream Pie Filling

Ingredients
  • 3 cup milk
  • 3/4 cup sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 egg yolks
  • 2 tablespoon butter
  • 1 1/2 teaspoon vanilla extract
  • 3 bananas

Step 1

Take three eggs and separate the yolks into a bowl. Slightly beat the yolks, and set the bowl aside.

Boil milk in a saucepan and then let cool. (This is known as scalding milk.)

In a separate saucepan, combine sugar, flour and salt. Slowly stir in scalded milk.

Step 4

Stir over medium heat until the mixture is thickened. Cover the saucepan for two minutes and continue stirring occasionally.

Step 5

Pour about ½ cup of the hot liquid into the bowl of yolk and mix well.

Step 6

Add the yolk into the saucepan and cook for another minute. Be sure to stir constantly.

Step 7

Take the saucepan off the heat, and stir in butter and vanilla extract. Let the mixture cool to room temperature.

Step 8

Slice the bananas and place them on the pie crust. If you have extra bananas, create a second layer.

If you want more bananas, feel free to add another.

Step 9

Pour liquid into pie shell over the banana slices. Refrigerate for at least an hour before serving.

If you desire, you can make whipped cream or meringue from your unused egg whites while the pie cools.

Take the pie out, cut, serve and enjoy!
