College is hard. Especially when you go to school far away from home and have to stay on campus for Thanksgiving. Do you know what is not hard? Making mug cakes. With some easy to find ingredients and a mug, you can make your dorm room more cozy this Thanksgiving with these four microwavable "Mugs-giving" treats. 

Pumpkin Pie in a Mug

  • Prep Time:5 mins

    Ingredients

  • 2 small cookies- crushed graham crackers gingersnaps
  • 1/3 cup pumpkin puree
  • 1 egg
  • 1 tablespoon milk- could be almond or soy milk
  • 2 tablespoons brown sugar
  • 1 teaspoon pumpkin spice - can also use cinnamon
  • 1 pinch salt
  • 1/2 teaspoon vanilla

    Combine pumpkin puree, egg, milk, brown sugar, pumpkin pie spice, and salt until smooth.

  • Step 2

    Add crushed cookies to bottom of microwavable mug.

  • Step 3

    Pour pumpkin pie mix on top of crushed cookies.

  • Step 4

    Microwave for 1 1/2- 2 minutes, checking every 30 seconds.

  • Step 5

    Carefully remove from microwave (it's hot!) and let cool for a few minutes. If you want to be fancy, add whipped cream. Enjoy, or keep in fridge up to 24 hours.

Apple Pie in a Mug

  • 1 medium apple thinly sliced- peel is optional
  • 2 tablespoons quick oats
  • 3 tablespoons flour- any kind will do
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1 large pinch cinnamon
  • 1 pinch salt

    Place the slices of apple in any configuration in a large mug and microwave for 60 seconds or until apples are warm to the touch.

    Add remaining ingredients to mug and stir to combine well.

  • Step 3

    Microwave for 30 second intervals, stirring in between, until you achieve optimal gooeyness (should be about 90 seconds in total).

Cornbread in a Mug

    Combine flour, cornmeal, salt and baking powder in small bowl.

    Mix egg, milk, and oil together in a separate bowl until smooth.

Stuffing in a Mug

  • 1 foot crusty french bread or 3-4 slices dry bread from dining hall
  • 1 celery stalk
  • 1 shallot if you can find one
  • 3 cloves minced garlic or 3/4 teaspoon garlic powder
  • 1 tablespoon butter
  • 1 1/2 cups chicken broth
  • Salt and pepper

    Cut bread in to 1/2 inch chunks and place in a large bowl.

  • Step 2

    Chop shallot and celery. Mix with garlic and butter in microwave safe bowl.

  • Step 3

    Microwave garlic and butter mixture for 45 seconds to tenderize.

  • Step 4

    Add salt and pepper to the mix and then pour onto the bread. Mix well.

  • Step 5

    Add enough chicken broth to moisten the bread, then mix with your hands to make sure liquid is absorbed.

  • Step 6

    Evenly divide bread mixture into two large mugs, making sure there is no excess broth. Microwave for 5-6 minutes, checking every minute until stuffing has a crispy, golden top.
